Company SAMPLE HACCP PLAN AND SANITATION STANDARD OPERATING PROCEDURE (SSOP)
Glorious Crab Company is a fictitious seafood processor that buys raw blue crabs from commercial fishermen and other suppliers in the mid-Atlantic region delivered to the plant by boat and by truck. The company produces fresh (refrigerated/iced), hand-picked crabmeat and thermally processed crabmeat packed in hermetically sealed metal cans and pasteurized in open vat pasteurizers. These products are sold through grocery chains and restaurants to the general public.
Glorious Crab's fresh crabmeat has a refrigerated shelf-life of 10 days when held in ice. Their pasteurized crabmeat has a refrigerated shelf-life of 12 months when held at 32-35°F. Pasteurization process schedules established by a process authority achieve the minimum lethality (bacterial kill) recommended by the National Blue Crab Industry Association and Shellfish Institute of North America (National Fisheries Institute). This process assures the destruction of non-proteolytic strains of the pathogen, Clostridium botulinum.
